Today I present a special recipe shared by Gianluca: Homemade lemon wine. This recipe is perfect for those who love citrus flavors and want to try something new and refreshing.
Ingredients
- 10 untreated lemons
- 250 g of raisins
- 1.5 kg of sugar
- 3.5 liters of water
- Wine yeast 1 teaspoon
Procedure
- Preparing the Zest: Peel the lemons to obtain the zest, similar to making limoncello.
- Boiling: Put the zest and raisins in water. Bring to a boil, then turn off the heat and dissolve the sugar in the hot water.
- Juicing the Lemons: Squeeze the lemons and add the juice to the fermenter.
- Preparing the Must: Once the syrup has reached room temperature, pour it into the fermenter along with the lemon juice.
- Fermentation: Add the yeast, close the fermenter, and install the airlock. Let it ferment for 5-6 days.
- Removing the Fruit: After 5 days, remove the lemon zest and raisins. Continue fermentation for about 28 days.
- Bottling: When fermentation is nearly complete (the airlock bubbles every 2-3 days), bottle the wine. The final density should be around 1050, with an alcohol content of 10.5%.
Tasting
After a month, the wine is ready to be tasted. It has a sweet and citrusy flavor, with a delicate alcoholic note and a lemony aftertaste. Perfect to accompany desserts or enjoy on its own.
