How to Preserve MEAT in Jars

The TONNO del CHIANTI (Chianti Tuna) is a culinary delicacy typical of the Tuscany region, renowned for its quality and unique flavor. Made from pork meat, it is flavored with local spices and aromas such as laurel, juniper berries, and garlic, giving it a distinctive character. This dish is appreciated for its soft texture and rich, aromatic taste, making it an ideal choice for appetizers or snacks. A symbol of Tuscan gastronomic tradition, Chianti Tuna represents an authentic culinary experience to be enjoyed on any occasion and not to be confused with the classic tuna in oil. Today, thanks to Gabriele who shared his recipe with us, we will see  how to preserve MEAT in jars.

INGREDIENTS

Pork loin      1.5 kg
Water                  2 liters
Salt                        1 tablespoon
Cloves                  1
Bay leaves           2
White wine            1 glass
Garlic                    1 clove
Onion                     1
Celery                     1 stalk
Carrots                    2
Juniper berries     1 teaspoon
Peppercorns        1 teaspoon
Parsley                   5 sprigs
Extra virgin olive oil 
Spices as desired

INSTRUCTIONS on how to preserve MEAT in jars

In a large pot, pour all the ingredients except the oil and the meat, place the pot on the stove, and turn on the heat.

While our broth comes to a boil, prepare the meat, which, to obtain excellent Chianti Tuna, must be trimmed of fat, skin, and nerve parts.

Cut the meat into slices considering the size of our glass jars; as you can see in the video, I cut the meat into large strips to imitate the real tuna.

Meanwhile, the broth will have reached a boil, so we can add the meat, which will be cooked slowly over low heat for at least 3 hours.

After 3 and a half hours, I turned off the heat and let the meat cool in the broth.

When the meat reaches room temperature, remove it from the broth and place it on a kitchen towel, pat dry to remove excess water, and then we can put our fake tuna in the glass containers.

As we place the meat in the glass jars, we add the spices we like, press well, and cover with olive oil; our homemade Tonno del Chianti is ready.

It can be stored in the refrigerator for about 10 days. If you want to store the Chianti Tuna outside the refrigerator, you need to boil the jars to create a vacuum. With this procedure, it can be stored outside the refrigerator for more than 2 months.
