Homemade bread – we never tire of experimenting with new recipes and techniques. This no knead bread is very easy and quick to prepare because it doesn’t need to be kneaded 🤪. Moreover, by using a terracotta pot as a mold, you don’t even have to worry about shaping it 😉.

INSTRUCTIONS
1) Pour the 2 flours into a bowl.
2) Add the sugar, salt, and yeast.
3) Finish by pouring in the water and 2 tablespoons of extra virgin olive oil.
4) Mix everything evenly with a fork. Remember that is no knead bread 😉 cover with plastic wrap and let it rise for about 12 hours at a temperature of approximately 15°C – 60°F.
5) Sprinkle some durum wheat flour on the surface where we will work the bread. Pour the dough and flatten it with your hands. Don’t flatten it excessively, be gentle.
6) Sprinkle with more durum wheat flour and fold by taking the longest edge and folding it towards the center. Do the same with the other edge. Then proceed by folding the other 2 remaining sides in the same way, theoretically the shorter ones.
7) Place the dough inside a cloth and let it rise for a couple of hours.
8) Place the empty terracotta pot in the oven, turn it on, and heat it to a temperature of 230°C – 445°F.
9) Carefully, take the hot pot, pour the bread dough inside. One precaution: try to pour it in such a way that the folds made previously face the lid of the pot. If you can’t manage, make a cross cut on the dough.
10) Cover with the lid and bake in a static oven for half an hour at 230°C – 445°F.
11) Remove the lid of the pot and leave it in the oven at the same temperature for another 15 minutes.
The bread is ready, but let it cool for a couple of hours before cutting it.
Excellent to enjoy with sun-dried tomatoes or with any cold cuts, or just with a good olive oil 🙂
