Spaghetti with homemade BOTTARGA

Spaghetti with bottarga is a typical dish of Italian cuisine, particularly popular in the region of Sardinia. It’s a simple yet flavorful dish, where spaghetti is usually dressed with extra virgin olive oil, garlic, parsley, and, most importantly, bottarga. Bottarga is a product made from dried and salted grey mullet roe, which gives the dish a salty taste and intense, distinctive aroma. This dish is loved for its simplicity and the high quality of its ingredients, making it a unique and refined culinary experience. My spaghetti with bottarga won’t have parsley because it’s not used here in Indonesia so impossible to be found, and the bottarga is homemade by me, likely from tuna instead of grey mullet.

 

INGREDIENTS

Spaghetti     100 g

Garlic               1 clove 

Olive oil           2 tablespoons

Bottarga        20 g

Parmesan    1/2 teaspoon

Black Pepper   1 pinch

Zest   of   1/2  lemon

 

INSTRUCTIONS

If you wish, you can complete each step while the pasta is cooking, but to avoid burning any ingredient, for your first spaghetti with bottarga, I recommend preparing everything beforehand.

First, put the pot on the stove to cook the spaghetti, with water, a little salt (remember that bottarga is salty), and lemon zest.

While the water is boiling, heat oil in a pan and sauté the garlic, being careful not to burn it, as it can ruin the dish.

Once the garlic starts to turn golden, remove it from the pan and turn off the heat.

By now, the water should be boiling, so you can add the pasta. I used square spaghetti, but you can use the classic ones.

When the pasta is halfway cooked (to be sure, follow the times on the package), transfer it to the pan with the oil to finish cooking, adding a few ladles of hot water from the pot.

Once the spaghetti is cooked, turn off the heat, add some bottarga, give it a good stir, and plate it.

Before devouring our pasta, add a little cheese to enhance the flavor of the fish, a pinch of pepper, and a final grating of bottarga.
