STUFFED PEACHES with CHOCOLATE and AMARETTI biscuits

Stuffed peaches, or “pesi pien” in Piedmont dialect, are part of the gastronomic culture of Italy and are an excellent dessert that is easy and quick to make. The main ingredients of this dessert are obviously peaches, cocoa, and amaretti biscuits. Since they are so delicious, I would say let’s not waste time and see immediately how to make Stuffed Peaches 🤪.

 

INGREDIENTS

YELLOW PEACHES 6
SUGAR 50 GR
AMARETTI BISCUITS 250 GR
BITTER COCOA 40 GR
1 EGG YOLK
1/2 TABLESPOONS RUM
12 BUTTER CHIPS

 

INSTRUCTIONS

1) Wash the peaches and cut them in half. Remove the pit and, using a teaspoon, scoop out the center of each peach half, placing the pulp in a bowl.

2) To the pulp, add the sugar and cocoa, and mix well. Add the egg yolk and rum, and stir again. Finally, add the crumbled amaretti biscuits and mix thoroughly. This is our filling for the stuffed peaches.

3) Using a teaspoon, fill each peach half with the filling and arrange them in a buttered baking dish. Finish preparing the peaches by adding a pat of butter on top of each one.

4) Place in a preheated oven at 160°C and bake for about an hour. Well done! Remove from the oven, let stuffed peaches cool slightly, and they’re ready to be enjoyed or devoured. The choice is yours!
