SWEET FRIED MILK

Sweet Fried Milk is a traditional dessert from the Italian regional cuisine, particularly popular in the Liguria region. It is a simple yet delicious dessert, characterized by its creamy texture inside and golden crispiness outside. Made with basic ingredients like milk, flour, sugar, and lemon zest, Sweet Fried Milk is a palate pleaser and an excellent choice for dessert or a snack.

 

INGREDIENTS

MILK

500 ml

SUGAR

70 g

FLOUR

CORNSTARCH

1 tablespoon

CINNAMON

1/2 teaspoon

SALT

1 pinch 

EGGS

FRY OIL

 

LEMON ZEST

 

 

 

INSTRUCTIONS

In a non-stick pot, pour in the sugar and cinnamon, then add all the eggs, except for one egg white which we’ll set aside to use later.

Add a pinch of salt and grated lemon zest. The amount of zest is to taste; I grated about a quarter of a lemon 🙂

Stir until you have a smooth mixture, then gradually sift in the flour while continuing to stir.

Keep stirring to avoid lumps and gradually add the milk, ensuring there are no flour clumps in the mixture. It’s not pleasant to eat sweet fried milk with lumps of flour.

Once the mixture is homogeneous, place it on medium heat and stir until it thickens and starts to come away from the edges of the pot.

Transfer it to a bowl, distribute it evenly, cover with plastic wrap, and let it cool. (Make sure the plastic wrap is in contact with the mixture to prevent the formation of a crust on the surface).

Once cooled, refrigerate for a couple of hours.

AFTER 2 hours, take the cooled mixture out of the fridge, flip the bowl over, and cut the “solid milk” into rhombuses or any shape you prefer.

Give the egg white that we set aside a quick whisk and dip the rhombuses into the egg white, then into the breadcrumbs.

Fry until golden brown.

Place the sweet fried milk on a paper towel to absorb excess oil, then transfer them to a serving platter, dust with a pinch of powdered sugar, and serve.
