INSTRUCTIONS

Before we proceed with the various steps, let’s make a note.

When I wrote this article and filmed this video, I was in Manado, North Sulawesi, Indonesia. Here, a distilled beverage called Cap Tikus is produced from the fermentation of palm sugar, with an alcohol content of 43% more or less. You can use the alcohol that you can find in the country where you are (Vodka, Rum, Tequila, etc.), and then insert the ingredients into the UOMODICASA website’s web app to balance your recipe.

To make this special homemade Limoncello, all you need to do is place the Cap Tikus, the leaves and the zest (only the green part) of your limes in a glass container with a tight seal. Close the container and wait for 4 or 5 days.

After 5 days, both your alcohol and the rest of the ingredients will have changed color. Now it’s the time to prepare the syrup.

In a saucepan, put water and sugar, turn on the heat, and dissolve the sugar. As soon as the sugar dissolves, remove the saucepan from the heat and add the zest and leaves that have been macerated in the alcohol to extract all the essential oils.

Once the syrup has reached room temperature, add the flavored alcohol and give it a good stir. Your homemade Limoncello is ready, all you have to do is bottle your liqueur and place it in the freezer.

Not for preservation, don’t worry, all liqueurs don’t go bad at room temperature, but because homemade Limoncello should be drunk chilled 😉
